
Asian Pork Stir Fry
This week’s challenge yielded a variety of different flavors and cooking styles. (And a lot of leftover turkey.
)
To start out the Midwest entries, Anne at green leanings stirred up a tasty-looking Asian pork dish with Napa cabbage, daikon radish and carrots with a honey-soy dressing.
Esp, Big Adventures with Little Buddies, decided to expand her cabbage horizons beyond coleslaw and make a kielbasa and cabbage soup. The creaminess of the soup was great and the flavor of the CSA carrots has ruined her for grocery store carrots forever.

Buffalo Burgers
Over at hippie in geek’s clothing, Angela tried her hand at slow “fast food” with buffalo burgers, freezer slaw made from vegetables found in her CSA box this summer, and homemade french fries.
Linda’s challenge meal consisted of red beans, peppers, onions and grilled wild-rice/pork sausages. Sounds delicious on a wintery evening and if you need a way to work off your hearty winter meals, Linda has plenty of ideas for outdoor winter activities on her site!

Turkey Pot Pie
If you stop by Fast Grow the Weeds you can see El’s homemade turkey pot pie. It sounds delicious filled with carrots, potatoes, herbs, leeks, turnips and homemade bechamel sauce and looks even lovelier. The meal was finished with a tossed salad of arugula, mixed lettuces, shallot greens, sunflower seeds and yogurt-garlic dressing.
One of my favorites, breakfast for dinner, can be found if you pop on over to put your shovel where your mouth is. The breakfast of backyard egg frittatta with peppers and onions and sausage links was rounded out with leftover turkey and sweet potatoes.
Lamb Chops and Squash Fritters
At Aagaard Farms you can find a fresh christmas tree and a delicious local meal of lamb chops with caramelized red onions, carrots and sage-spaghetti squash pancakes with chard relish.
If you have children, then you can relate to the folks at Midwest Green. They may not be operating a restaurant, but they did serve three, unique, dark days dinners. The grown-ups feasted on homemade chicken soup, baked sweet potatoes and apple wine while the kids had homegrown baked potatoes or salad.

Stuffed Delicata
From the West you can find a recipe for stuffed delicata squash at arugulove. Filled with leeks, bread crumbs, garlic, egg and goat cheese, the squash looks delicious and the meal was finished out with sauteed broccoli rabe sauteed with chilies in olive oil.

Potato Leek Soup
This week must be the week for recipes, because here’s another! Fall and winter scream, “Soup!” to me and this week provides more than one delicious soup dinner. Utilizing produce from her CSA and a variety of other local ingredients including bacon, Anita @ Married . . . With Dinner has whipped up a fantastic variation of one of my favorites, Potato Leek. Bonus points for presentation, Anita!
Corn Chowder
Another delicious soup was featured this week. One of my favorites, corn chowder, was on the menu with homemade popovers at Our Life in the Country. It’s been ages since I made popovers; maybe I’ll have to try that next week.
Ellen, 2010 CSA Challenge, cooked up a storm this week. Dinners included red bean, cabbage and root stew; roasted veggie pie; lentil buttercup squash soup; and pumpkin black bean soup. Sounds like they’re having a riot with their CSA boxes at her house!
It was a Ducktastic week for Einat, Almostima, with her son’s first scrambled egg and duck egg toad in the hole for her. Excellent way to start a busy week day!

Creamy Beans & Kale
After being accidentally stood up by her date, Jen of Eat Local Challenge made her way home and pondered what local foods to eat for dinner. Remembering the pot of cooked white beans in the fridge and a favorite recipe, she made a bowl of crusty and creamy beans and kale. Having kicked off her cute shoes and put on her sweats, it was just the thing to eat that night.
