Dark Days: Week #3 Recap (South)

From the South we start with sausage stuffed acorn squash with a side salad finished with pear and feta from Knitting 40 Shades of Green.

Copious leftovers kept Jenelle at Delicious Potager from cooking nearly all week, but when she got around to it she tried out a new recipe: Roast spaghetti squash with butter, parmesan and wine.

Michelle at Hippy Chick’s Garden made a delicious-looking homegrown cornish hen with sweet potatoes, squash and homemade biscuits.  The chicken was seasoned with garden-grown herbs and finished with a home-canned mint glaze.

Laura at Laura’s Mommy Journal joined the challenge for the first time this week and created a lunch of homemade, grass-fed meatloaf with mashed sweet potatoes and local milk.

Illness kept Windy City Vegan out of commission for most of the week, but she managed to create a delicious-looking soup for her challenge meal anyway.  Red lentils, split peas, rice and herbs were probably just what the doctor ordered!

At the mommy porch, comfort food was on the menu.  Hamburger steaks with gravy, mashed potatoes and a side of mixed vegetables known fondly as “ZaZa Burgers” made for a satisfying family meal.
