Dark Days 09/10 :: Week #9 Recap (PNW)

urbanhennery-lemoncurdLaura made a big batch of lemon curd for her local meal. She brought eggs from the (not so) Urban Hennery to our house in California, where we combined them with Meyer lemons from the farmers market and local organic butter. We ate it on homemade bread and dolloped on angel food cake.

At Acorn Cottage Artistry, Alison didn’t post a meal this week. But she did muse on why she joined the Dark Days Challenge, and pondered a better backyard garden in 2010 as a way to incorporate more SOLE food into her meals.

eugenius-summervegLeft to her own devices this week, Eugenia didn’t feel much like cooking. But for this week’s meal on Culinaria Eugenius, she pulled a bag of slow-roasted summer vegetables and some red pepper spread from the freezer, and served them over locally made linguine, dubbing it “frozen mush of summer” pasta.

I’m speechless that Farming Mom Beth managed to get an “almost-Dark Days” meal on the table, so soon after the birth of her baby. She put together a plate of frozen homegrown broccoli, stuffed mushrooms, potato gratin, and black beans cooked with a ham bone; non-local rice was her only exception.

ecogeek-applecrispOver at Eco Geek, Sarah discovered 100%-local baking can be difficult, even when good fruit is in season. She claimed exemptions to make her easy apple crisp, but the key ingredients — apples, and flour — came from within her local radius. Sarah cleverly doubled the recipe to have an extra bag of crisp topping to freeze.

The Hippie Housewife catches up, recapping her family’s New Year’s meal. It’s hard to beat the simple elegance of prime rib with potatoes, which Aimee’s husband cooked for her and the kids, and served with Oregon shrimp salad and cottage cheese on the side.

rocksolid-pastaallavodkaWondering if it’s the weather, Brittney at Rock Solid makes her second straight Dark Days meal with hard liquor. She whipped up a great-looking batch of pasta alla Vodka, with all-local sources for everything but the dry pasta. She served homegrown green beans on the side, simply dressed in local butter.

Annette at Sustainable Eats started the week with a soup made from pot roast leftovers. She also made a lot of applesauce, English muffins, roast chicken with kale and squash, green chile chicken enchiladas, a pork-chop dinner, and bread pudding muffins. Her husband chipped with with a dinner of fish patties and slaw.

  • I need to participate in this next year. I’m making local beans today – MMMM. Can’t wait, hearty bean soup is so comforting and warming to me during these cold dark winter days.

    My dark days meal last week featured an elk pot roast cooked with red wine and local garlic, parsnips and red onion. The gravy was great over mashed Yukon gold potatoes from the Skagit Valley and it all went well with Washington Brussels Sprouts that were shredded, sauteed and tossed with a bacon and green onion vinegrette
