One thing most home cooks know is that it’s a whole lot harder to cook for one than it is for many. This week, with her regular eating companion out of town, Norah at Aagaard Farms confronted the solo meal issue and handily dealt with it by cooking up a local ham to use in a multitude of meals.
At Big Adventures With Little Buddies, roasted chicken and vegetables was the name of the game this week. This is one of my standards as well, so I happily vouch for its ease and good taste.
Illness strikes the Fast Grow the Weeds household, and so they cope (and use up leftovers) by making crepes (I plan on adopting this practice).
When a snowstorm strikes a household that’s already dealing with the sniffles, Green Leanings fights back with chicken barley soup.

This week, Notes From a Country Girl Living in the City was out to show the world that just because it’s local, doesn’t mean it has to be healthy! She whipped up a mess of chicken wings, homemade french fries and an apple pie with a spelt crust.
While I’m snowed in here on the east coast, Put Your Shovel Where Your Mouth Is is whipping up meals that are straight out of last summer. Mmm, pasta with tomatoes, eggplant, zucchini and peppers.
This week, The Local Cook made a batch of Maple Parsnip Soup (using a recipe from Simply in Season). While tasty, she and her husband found that the smooth soup left them wanting something more substantial.

Over at Almostima’s Blog, they’re specializing in fast food Dark Days meals these days, including quick-cooked strips of beef tossed with pasta and pesto and local sausage with spinach pasta.
Arugulove makes an elegant Dark Days meal of Pear and Autumn Vegetable Soup (recipe by Martha) and a little salad of mustard and salad greens. So pretty!
Despite the fact that they couldn’t get any local avocados (my mind boggles at the thought of local avocados) Anita and Cameron at Married With Dinner made the most lovely-looking Tortilla Soup for their Dark Days meal.
It was risotto with kale, leeks, mushrooms and garlic at Our Life in the Country for week 12. Looks tasty and satisfying!
What was on the menu at Prepping 4 28 this week? Why, the black bean burgers from Sustainable Eats, that’s what! Seems like a good, hearty meal (and one I’m adding to my mental must-make list).
Jen at Eat Local Challenge caps off a highly productive weekend with a meal of grilled flat iron steak, roasted brussels sprouts (she parboiled them in salted water before roasting, what a good trick!) and a gratin of potatoes, leeks and king trumpet mushrooms. Mmm.
