Do you have standby meals? Ones you can make without looking at a recipe or worrying about having the ingredients on hand? Kahula Pork is one around here.
I originally got the recipe from Sugar Creek Farm, and we really haven’t altered it all, other than backing off a bit on the liquid smoke. It’s not the localist of recipes for the rub, and I suppose you could swap out the garlic powder for real garlic, but we love it all the same.
Last week we made it with a fresh ham from our 2009 half pig. I love that when we get home from work the pork is falling off the bone and ready to eat whenever we’re ready to eat it. We peeled some Yukon golds, boiled them and then mashed them with homegrown garlic, kosher salt and local butter and milk. We sauteed some of last summer’s green beans with a bit of butter and a squeeze of Married with… Dinner lemon and away we went.
It’s such a non-photogenic meal that I didn’t even try, but really, give it a try. I think you’ll fall in love with it too!

Kahula Pork*

4.5# pork roast (I usually use a fresh ham)
1 T. liquid smoke (we cut this back to more like a big 1/2 Tbs)
3 T. garlic powder
6 T. soy sauce
1 T. kosher salt
Mix marinade ingredients together and rub over all sides of the pork roast. Place pork in crockpot, cover and cook on low 8 hours. Usually it ends up being closer to 12 hours around here – this is one of those recipes that you can’t cook for too long.
*I realize that this is supposed to be Kahlua, but we call it Kahula around here because of the assumed typo on the original. There’s nothing Kahlua about it (at least not the milky liquor) so the name stuck.
