At the (not so) Urban Hennery, Laura thawed a pork shoulder from her freezer stash, but couldn’t decide what to do with it. She ended up making gorgeous barbecue pork in the Crock-pot, with mashed homegrown potatoes and a leafy green salad with dried cranberries and hazelnuts on the side. Annette at Sustainable Eats realizes she [...] Eco-Geek Sarah found herself at the mid-winter Ballard market on a day when meat vendors were out in force, and she couldn’t have been happier. Sharing the secret of an unbelievably moist meatloaf, an all-star list of local farms’ meats made it into her meal, as did local greens and sweet potatoes. Even deep in garden-planning [...] Two straight weeks of bronchitis isn’t slowing Annette down (even though she says it is). She managed yet another impressive array of Sustainable Eats this week, including omelettes, chile con carne with corn muffins, whole-wheat pizzas with homemade sausage, plus homemade English muffins and a potato-y breakfast scramble. Amy rejoins the challenge this week with a [...] Laura made a big batch of lemon curd for her local meal. She brought eggs from the (not so) Urban Hennery to our house in California, where we combined them with Meyer lemons from the farmers market and local organic butter. We ate it on homemade bread and dolloped on angel food cake. At Acorn Cottage [...] Brittney at Rock Solid is finding it easier to come up with locavore meal options, heading into week 7. She made a breakfast strata this week, a great way to use up odds and ends in the fridge — mushrooms, leeks, and Cougar Gold cheese — and served it with a side of sunny, home-canned [...] Alison at Acorn Cottage Artisanry is using the Dark Days to dig deeper into her local resources, an exercise she describes as “an interesting combination of difficult and fun”. She discovers a new cafe/market with a nice selection of local produce, and uses some of her shopping finds to make a wintery potato chowder garnished [...] Whew, I have a new appreciation for what Laura does every week!
