Daftly Smitten is another blogger who says why not have breakfast for dinner. She defrosted some polenta pancakes and served them with strawberry syrup. She also made a tasty omelet with cheese, mushrooms, bison sausage and some non local spinach. A hearty meal for a famished eater.

At the Farmer’s Market made the all time comfort food Macaroni and Cheese. The ingredients for the cheese sauce came from local sources (including the flour - who knew wheat was grown in NY?) and it was served with garlicky kale. Nothing like Mac and Cheese to make everything right in the world.

Seems like most folks this week either had an elaborate, well-planned-out holiday meal, or a simple meal, made from what’s on hand, in preparation for or in recovery from a holiday meal. Both types are a wonderful celebration of the season.

From the South we start with sausage stuffed acorn squash with a side salad finished with pear and feta from Knitting 40 Shades of Green.
Copious leftovers kept Jenelle at Delicious Potager from cooking nearly all week, but when she got around to it she tried out a new recipe: Roast spaghetti squash with butter, parmesan and wine.
